Tomato chicken with mashed cheese and potatoes



One delicacy of Lappland is the special potato, puikula. It requires tender and firm touch when mashed, not to become gummy paste. The sweet potato is made to be mixed with blue cheese. Chili and cocoa give a kick to the combination of chicken and tomato.
